Wild Rice Burgers

These wild rice burgers don't try to be meat, they are just their own thing and boy are the tasty. This recipe comes courtesy of the Long family.

A note, it says it feeds 4, but that means 4 patties. For the Forge, I think 16 is probably a good target if you have a side, that way everyone gets 2 burgers.

Finally, don't underestimate how long it takes wild rice to cook, and don't overlook that this recipe works best if you let the ingredients sit in the fridge for a few hours between mixing and cooking.

Ingredients

Feeds:

[1/2] cup wild rice (dry)

[1] small onion, diced fine

[12] crushed saltines

[1] drop(s) liquid smoke

[1/2] tsp chili paste or chili garlic sauce

[1] tsp Cavender's greek seasoning

[1/2] cup shreddeded sharp cheddar

[1/2] tsp cornstarch

[1/2] tsp salt

[1] egg + [1] egg white (additional egg whites if they aren't staying together)

Directions

  1. Cook the wild rice according to the directions on the package
  2. Mix all ingredients together. Works and tastes best if you let the mixture sit for a few hours (in the fridge) before cooking.
  3. Form into (number of servings) patties.
  4. Cook on a skillet w/ some oil over medium heat until firm.
  5. Serve with fun condiments (caramelized onions are a great one)
