Mashed Potato Pancakes

These mashed potato pancakes are a great way to use up old slightly dry mashed potatoes. They are fun to make, just like normal pancakes, and the cheese stretching when you cut them apart is super satisfying.

I made this for the first time to just use up some leftover mashed potatoes and I didn't expect much from it. Boy was I wrong; these were an instant hit in the forge.

Ingredients

Feeds:

[4] cups mashed potatoes (preferably leftovers)

[2] cups mozzarella cheese, shredded

[1] egg

[1/4] cup flour

[2 1/2] Tbsp chives, chopped

[1/2] cup bread crumbs

[2] Tbsp olive oil

Directions

  1. Combine mashed potatoes, mozzarella, egg, flour, and chives in a large bowl. Mash with a potato masher until smooth and combined.
  2. Form dollops of the potato mixture into a 1/3" thick patties with your hands. (If it is too wet to stay in shape, add flour a tablespoon at a time to the mixture until it works). Coat both sides of each patty with bread crumbs.
  3. Cover your cooking surface (either an electric skillet or frying pan) with oil. Cook the patties until golden brown (about 3-4 minutes per side).
