A classic and simple side, popular here at the Forge. It pairs especially well with lighter entrees since the creamy sauce makes these peas dense and hearty.

[2] tbsp butter
[2] tbsp flour
[1/2] tsp salt
a pinch of black pepper
[1] cup milk
[2] tsp sugar
[2] 10oz packages frozen peas
Microwave the frozen peas as directed (usually around 5 min 30 sec), one bag at a time.
Meanwhile, in a medium saucepan, melt the butter, then add the flour, salt, and pepper to make a light roux. Stir and cook on medium-low heat until bubbling. Slowly pour in the milk and add the sugar. Keep stirring and cooking until the sauce thickens up.
Add the microwaved peas to the saucepan, and stir to coat evenly.
