This recipe came about one day as I was wanting to make something new for lunch, and our leftovers were sparse. I was fairly confident that I wanted to use chicken and rice, but I was unsure of the flavor I desired, so I reached into our spice cabinet a few times randomly to try to decide on a flavor. As I was doing that, Mitch handed me a very large chicken spice container from Aldi, which contained a few different seasonings. I smelled them all, decided on the chipotle lime seasoning, and then made this!
When I originally made this recipe, I actually made half of the amount that is on here, but I found it to be a little bit too much for one serving, so I doubled it and said it would feed 3 here. If you want to make a single serving though, you may find it easier to type in 1.5 for the serving counter, since doing 1 will make the quantities a little strange.
This recipe is very fast, so it makes for a great lunch meal if you're home and have a bit of time to cook (without wanting to actually cook chicken). It also would work great for preparing lunches for during the week!
