Chipotle Lime Chicken and Rice

This recipe came about one day as I was wanting to make something new for lunch, and our leftovers were sparse. I was fairly confident that I wanted to use chicken and rice, but I was unsure of the flavor I desired, so I reached into our spice cabinet a few times randomly to try to decide on a flavor. As I was doing that, Mitch handed me a very large chicken spice container from Aldi, which contained a few different seasonings. I smelled them all, decided on the chipotle lime seasoning, and then made this!

When I originally made this recipe, I actually made half of the amount that is on here, but I found it to be a little bit too much for one serving, so I doubled it and said it would feed 3 here. If you want to make a single serving though, you may find it easier to type in 1.5 for the serving counter, since doing 1 will make the quantities a little strange.

This recipe is very fast, so it makes for a great lunch meal if you're home and have a bit of time to cook (without wanting to actually cook chicken). It also would work great for preparing lunches for during the week!

Ingredients

Feeds:
  • Chipotle lime seasoning (I used a ready made one from Aldi)
  • [2] cans cooked chicken (12.5 oz cans, or about [2] cups cooked total)
  • [2]-[4] cloves garlic
  • [1] onion
  • [2] cups brown rice
  • [1] cup salsa
  • [1] cup shredded cheese (I did cheddar, but I think colby jack would be good with this)
  • Vegetable oil

Directions

  1. Start boiling the water needed for the rice, following package directions to cook the rice as you prepare the rest of the meal.
  2. Dice the onion and garlic. Then, heat oil on medium-low heat in a pot or pan large enough to hold all of the ingredients (including cooked rice), and add onions and garlic.
  3. Season the onions and garlic with the chipotle lime seasoning to taste - don't overdo it here, though, since you'll add more later. Cook them until very close to desired consistency.
  4. Add chicken into the pot with the onions and garlic, and then season with chipotle lime seasoning again until chicken is also coated with the seasoning. Stir until chicken is heated through, and break up larger chunks of the chicken as appropriate.
  5. Add salsa and cheese, and stir until incorporated and cheese is melted.
  6. Turn off heat, then add cooked rice and stir everything together.
